“the pollinator garden” cocktail recipe for barr hill gin’s bee’s knees week!
each year, barr hill gin hosts bee’s knees week- a celebration of the pollinators that make their vermont-made gin possible. since 2017, participants have helped fund over one million sq.ft. of pollinator habitat nationwide and counting! their gin is made in montpelier, vermont and they are committed to weaving sustainability into each facet of their business. for each post shared on social media, they plant 1 square foot of pollinator habitat.
our cocktail offering this year is called “the pollinator garden” with honey lilac syrup made in house. lilac season is fleeting- so we wanted to find a way to let the sweet scent linger here a little longer. all week, we’ve been admiring the countless bees, tiger swallowtail butterflies, and hummingbirds circling the gardens- what would we do without them?!
this recipe is from our front of house manager and cocktail witch, marlaina. lilac blossoms thanks to our pizza and pastry assistant, sam. enjoy!
TO MAKE THE HONEY LILAC SYRUP:
you will be using enough honey to completely submerge the lilac blossoms, so pick enough lilacs as you wish for the amount of lilac honey you want to make. add blossoms to an airtight container and cover with honey, put on the lid and let steep for 2 weeks (shaking or stirring the jar every few days). strain and add equal parts hot water to honey to make it into a syrup. for 2 cups of syrup, we added 5 drops of orange blossom water. store in an airtight container and keep in a cool, dark place for up to a few months (if it lasts that long!).
THE POLLINATOR GARDEN
- 3/4 oz. lemon juice
-3/4 oz. honey lilac syrup
-2oz barr hill gin
-1 drop of rose water
shake with ice, strain, and pour into a coupe glass. garnish with lemon peel or edible flowers. best enjoyed sitting in a garden admiring the passerby pollinators.
