and experience our heartfelt, inspired food.
our open kitchen with a wood oven is the heart of the restaurant. we serve wood fired fare, crisp greens and vegetables from farms a stones throw away (yes, even in winter), and all manner of loveliness from hardworking vermont farmers, makers, and cultivators. our sourcing is everything.
we care a lot about where our food comes from and the people behind it. most of our ingredients are sourced from nearby farms and small producers we know and trust. what we can’t get locally, we source through gustiamo, who work with small italian growers with a similar ethos.
whether it’s pizza, bread, or crackers, all of our doughs are naturally leavened with native grains, deep-well water, sea salt, and a house sourdough culture we’ve lovingly nurtured.
we cook without seed oils, using only extra virgin olive oil and zero acre oil (a clean, high-heat oil made from fermented sugarcane). our produce is grown with care, some certified organic, all grown with integrity. proteins are sourced with the same standards in mind.
our menu is served family style, and dishes come out as they’re ready. we encourage you to try a few things and share — it’s the best way to enjoy the kitchen’s range.

reservations are highly recommended! we take walk-ins when possible, but please make a reservation, we hate turning people away!

we don’t make gluten free dough. whether it’s pizza, bread, pasta or crackers, all of our doughs are naturally leavened with native grains from NEK grains and elmore mountain bread.
